Netflix the weather this beautiful weekend! For any picnics or upcoming party events, try making this Bacon + Kale Rotini that’s super quick and easy. I used some of my favorite ingredients to create this dish and am excited to finally share it with you.
Bacon’s savory flavor profile plays well with the nutty and sweet notes in the Tahini dressing. Kale is a nutrition staple that also freshens up the heartiness quite nicely. Adding red pepper flakes is optional but the subtle spice really enhances the overall palate. For dietary restrictions, substitute meat products with your favorite vegan, vegetarian or protein option.
Bring this dish as a picnic side or to enjoy all on its own. Prep time is only 5 minutes and all ingredients can easily be found at your local food outlets. I hope you love my Bacon + Kale Rotini as much as I do. E ku jeun (that’s Yoruba for happy eating)!

1 12oz box Whole Wheat Rotini or Penne Rigate (dry)
1 tablespoon Olive Oil
1 small Onion (chopped)
4 cloves Garlic (minced)
10-12 strips Bacon (chopped)
1 pound fresh Kale (cleaned and cut)
1 can (14.5 ounce) Chicken Stock
Seasoning blend (teaspoons Cumin, Paprika, Dried Crushed Basil & pinch Red Pepper Flakes)
2 tablespoons Tahini
2 tablespoons Honey (Grade A)
2 tablespoons Lemon Juice
1. Bring pot of slightly salted water to a boil. Add pasta and cook for 6-8 minutes or until al dente. Drain water and reserve.
2. In a large skillet, heat oil and bacon. Cook through until no longer pink. During the last 5 minutes add onion and garlic to skillet. Add broth and seasoning blend.
3. Cook over medium heat for 5 minutes to slightly reduce. Add kale; cover skillet and simmer on reduced heat until kale is tender.
4. Add pasta to skillet and mix together. In a small bowl integrate ingredients for dressing; drizzle over pasta. Serve and enjoy!
